Bulgarian Moussaka

Unlike what you might expect, this is one of the easiest dishes in my repertory. In takes time to bake but preparation is a breeze. There are an awful lot of different moussakas that I suppose all originate from different parts of the Balkans. This is the most popular one in Bulgaria and when you order moussaka in a Bulgarian restaurant this is exactly what you are going to get. All others are named after the veggies used — moussaka with zucchini, with eggplant or vegetarian moussaka (rice and vegetables).

Bulgarian Vegetarian Mish Mash

Great vegetarian dish. Very simple to make with just a few ingredients. Could be served either as a main course or as a side dish. You can use 2 yellow (instead of green) and 2 red bell peppers if you prefer. If you like feta, you could use more. I personally, love feta and double the amounts for the feta. This super cheese dish goes great with a crispy crust bread like ciabatta. Enjoy!

Banitsa With White Cheese (Bulgarian Banitsa With Phyllo Pastry)

Banitsa is a traditional Bulgarian meal and has very special place on the table on all traditional holidays. It can be done with different fillings like spinach, leaks, minced meat and other fillings; one thing is always the same – the phyllo pastry. Bantisa with white cheese is the most popular. It is served best with an extra bowl of plain yoghurt. It is my favorite breakfast. This recipe is my mom’s recipe and there are some small variances of the preparation in the different areas of the country. Some people use oil instead of butter (or margarine), some people do not use yoghurt but milk, some do not use milk and yoghurt at all, only eggs and white cheese. When we use only eggs and milk we call it milk banitsa.
