Posted for the Zaar World Tour to Africa. I have yet to make these but I there is sweet potato bread, pie, biscuits and cake…why not cookies?

Buea Coconut Joloffe Rice (Cameroon)

This is a vegetarian joloffe rice – the fresh vegetables added to the sauce can vary or be substituted with frozen mixed vegetables. This Cameroonian-style joloffe rice is made with coconut milk and in the Cameroons it is usually cooked with meat. Basmati rice, although not traditionally used, makes delicious joloffe and requires less liquid when cooking. From cdkitchen.

Fried Fish in Peanut Sauce (Cameroon)

This recipe was featured on week 46 of my food blog, “Travel by Stove.” I am attempting to cook one meal from every nation on Earth, and Cameroon is my 46th stop. I did take a few liberties with this recipe, since the original version called for dried shrimp (I don’t recommend it). Instead, I used bonito flakes (the main ingredient in Japanese miso soup) and fresh salad shrimp.

Posted for ZWT. I haven’t made this yet so the yield and time to make are a guess. Use collard greens, kale, mustard greens, swiss chard or spinach.
