British Mushy Peas (Using Regular Spring Peas)

Mushy peas are the quintessential side veg to accompany fish & chips in the UK. The traditional recipes use marrowfat peas, but more modern versions take advantage of the ordinary English spring peas you can find in any freezer case. This version was bright, refreshing, and while it does taste different from the marrowfat version, it is still quite good. This is also great served with with lamb. Bulgarian Mixed Salad

This is a salad for people who love onions and olives. You might want to use Vidalia or Maui onions for a slightly sweeter flavor. The preparation time includes time the onions and cucumber stand. The recipe comes from “The Best of Slavic Cooking” by Alojzije Kapetanovic and Ruzica Kapetanovic.

Light Summer Salad (Bulgarian Shopska Salata)

Found this recipe and it makes for a great last minute what is in the fridge salad to go along with all grilled meats! It is great for a cookout or picnic. It can be a small salad or a large one. dress it up with what vefies you like to make it your own. Use crumbled goat cheese or the traditional bulgarian sirene cheese.
