This is how I sauté mushrooms and onions to serve with grilled steak. I’ve been doing it this way for years and never really thought of it as a recipe until today when my husband mentioned that it was the best he’d ever had. If you have leftovers, make an omelet with them with smoked swiss cheese and serve with hot, steaming bowls of tomato soup with basil. Just trust me on that.
This is an awesome low-carb version of loaded baked potatoes, and tastes far better than any version of mock potatoes that I have tried. In fact, this dish is soooo good, you will not believe it! I do not remember where I got this recipe, but it is a fabulous side to any low-carb meal. You will be pleased, I promise! Yum! Yum!
These twice baked potatoes are great to keep in the freezer for busy days or unexpected company! When baking potatoes are on special, I buy a 10-15 pound bag and make about 30-35 of these creamy, delicious potatoes for the freezer. A wonderful side dish with steaks, roasts, seafood, pork and meatloaf. For variety, sprinkle top of potatoes with real bacon pieces just before serving. To have a meatless lunch, I often heat one of these potatoes in the microwave or toaster oven.

It can be made with freshly-cooked pasta or with leftover, cooked pasta that has no sauce on it.
