Rotisserie Marinated Cornish Hens

Marinating any kind of meat adds so much to the flavor and also helps make the meat more tender. Cornish hens are no exception. The following marinade works great on chicken as well. Although I cooked these on the Rotisserie you can go ahead and roast them in the oven and they will turn out perfect.

Mahogany Glazed Cornish Hens

Conish hens are not just any small chickens, but a special, plumper hybrid developed in the late fifties. They are often sold frozen, but can be thawed overnight in the fridge. In found this recipe in Good Housekeeping magazine. I have not tried this recipe, but I’m posting it for safe keeping.

Grilled Cornish Game Hens & Eggplant Stuffing

Cornish hen grilled and placed with eggplant dressing. ****You can sub the eggplant with oysters just don’t add salt to the stuffing. You can also use wild mushrooms. I spice up the hens with creole seasonings.
