Hawaiian Pork Stir-Fry

Recipe from a friend who served it as part of a poolside buffet. Add a can of chinese baby corn at the end for more color and texture.

Hawaiian Meatballs

I was an incredibly picky child but this was the one meal that my mom made that I would always eat… and a whole lot of. You MUST try this recipe!

Chicken, Mango, and Rice Salad

This is an awesome summer salad. The mix of the ingredients may seem odd, but I promise you everyone I have served it to has loved it. Hopefully you will, too. The Mango gives just enough sweetness to the dish, and the many textures and flavors work well together. You may adjust the amounts to your liking. I tend to like more fruit and cilantro with less rice.

Traditional Sapa Sui (Samoan Chop Suey)

I love this recipe! It’s cheap, delicious and fast to prepare. It comes from an old boyfriend’s mum. She is Samoan and a great cook. As this is a Samoan recipe, you can bet it’s going to feed a small army.

Authentic Trinidad Pepperpot

Slow-cooked pork hotpot which is a classic example of afro-carribean one pot cookery. The sort of meal I like – bung everything in the pan and see what happens! Don’t be put off by the length of the ingredients list, it is really dead simple to prepare. This is not as spicy as it sounds and is deliciously warming rather than stuffed full of chilli. Cook in the morning and leave to simmer for as long as possible.
