This is a nice easy baked doughnut type bun.. would buy these in the school cafe… on the way home from school many many times..we would gobble them up…

The Great British Eccles Cake

There are few things more quintessentially British than an Eccles Cake. They are quite simply a great British institution. I absolutely adore them!! This recipe was created by the Michelin starred chef Marcus Waring, especially for the Great British Menu competition. The pastry takes a little time, but it really is worth taking the time and effort to achieve that perfect flaky buttery deliciousness. Of course if it really is too much trouble you can substitute store bought puff or rough puff pastry. Go on treat yourself to a taste of Great Britain with your cup of Earl Grey tea! Timings do not include chilling times!

British Apple Strudel

Delicious apple with spiced fruit mince Its real comfort food served either hot or cold, with cream or ice cream, I made this in a hurry when I had unexpected visitors and it really was a hit

This recipe originally appeared in The Sugar Mill Caribbean Cookbook, but I have altered it to use the crust from a different Sugar Mill pie recipe (coconut cloud tart). The original recipe simply called for a refrigerated pie crust.

It was really good with a little honey drizzled over it.
