This dish a winner! Simple, easy to make and it has great presentation. I’ve made this 3 times so far and it’s never failed. The hens cook perfectly and the taste is wonderful. #69724 makes a perfect side dish for this entree. The recipe comes from the Aug ’03 issue of Gourmet. This is a great meal for entertaining! I served it for 10 this weekend and everyone loved it.
This is the perfect entrée for a holiday dinner for two. Complete the meal with sautéed green beans and wild mushrooms and a wild-rice pilaf with chopped fresh parsley and hazelnuts. For dessert? Chocolate mousse topped with rum-spiked whipped cream and chopped crystallized ginger.

With the Christmas holiday so close I didn’t want to do a turkey so I thought I’d try something different. I love the taste of Cornish Hens and with the Mole sauce it was really tasty. I have a 7 quart slow cooker and it was just the right size for this dish. As per DH’s request, I used a lot of coco powder in my mole sauce but you can use less.
Even though they are little they will fill you up, I usually serve this with whole wheat cous couse and a veggie.
