Crock Pot Sausage and Mushroom Bake

Tasty, hearty sausage and mushroom bake. Great for those cold winter nights. Also if you omit the chilli it would be an excellent breakfast to wake up to. The original recipe uses beef sausages, I prefer chicken but it’s personal taste. And I normally don’t even skin the sausages.

Sour Cream and Chive Potato Pancakes

Yummy pancakes which can be served for breakfast, brunch, as a snack or as a side-dish. Although the recipe specifies sebago potatoes, you can also use russet burbank or spunta potatoes. All of these are potatoes that are varieties which are good for baking. This recipe has been adapted from a recipe in the Australian Women’s Weekly’s ‘Potatoes: over 100 exciting ways to cook the humble spud’, recently reprinted by popular demand. It is essential to squeeze as much moisture as possible from the potatoes in step one before adding the potatoes to the other ingredients. Please feel free to vary the herbs according to your taste preferences.

Mushroom Hotcakes/Pancakes

This is from a recipe card I picked up at the local markets and looks so good. Serving suggestion given are to top with reduced fat cream cheese or with a dollop of tomato chutney and cottage cheese.

Rhubarb Muffins

Nothing matches muffins with coffee or a cup of tea. Making muffins with Rhubarb is a great way for me to get my family to eat it. This particular recipe is from a book called “Muffin Magic” by Diana Linfoot.
