Aloha Hawaiian Banana Bread

I love this recipe because it uses really ripe bananas that you can catch on sale so it saves money and because Splenda works well in it. I’ve never tried the other national brands of artificial sweeteners, so I can’t comment on how they’ll work. You can also make this with regular sugar. If you do, OMIT the honey. Macadamias are very expensive, but wonderful in this recipe. Pecans and walnuts work just as well. Use either or a mixture of the two for an extra kick. Try it for breakfast with a cup of hot tea or coffee. This recipe yields 2 good size loaves so you can enjoy one now and freeze the other or pass it along to a friend.

Hawaiian Loco Moco (Hearty Breakfast)

Loco Moco is Hawaii’s original homemade fast food and can be found at just about any fast food joint, roadside diner, mom and pop restaurant or lunch wagon in the Islands. There are many different versions of Loco Moco but they have 4 basic ingredients. Rice, a beef patty, sunny-side up egg and gravy. This is for 1 serving so you might want to share – it’s a HUGE dish! The cooking time varies depending on if you have to make the rice or gravy from scratch. Enjoy!

Mango Banana Bread

I found this recipe on the alohaworld website (http://alohaworld.com/ono) and just adore it! I’m always looking for a good banana bread recipe and this one fits the bill! It’s moist and has a nice crisp, almost caramelized crust. Now if I could just figure out how to keep the crust during storage!
