Grilled Ginger Chicken Wings

I “bribed” one of my students to watch his Cambodian grandma make these and write everything down. These are just like what she made! If you don’t like ginger, don’t make these. Prep time doesn’t include marinating.

Khmer Krom baked chicken wings with sweet and spicy sauce is another delicious variation on some of the Cambodian recipes I received from students….NEW note– as for being authentic or “really” Cambodian, all I can tell you is that I’ve had similar chicken at three different students’ homes and this was from one student’s grandmother. It’s pretty good regardless!

British Pub Pickled Eggs

Pickled eggs are popular fare for pub-goers and low-carbers. Eggs used for pickling should have clean, sound shells. Small or medium eggs are usually a good choice for pickling so the seasoning can penetrate deeply into the egg. Fresh eggs are the best to use for pickling to ensure the highest quality possible since the eggs will be stored over a relatively long period of time. However, eggs at least a few days old will peel better after boiling.This is a refrigerator pickle only and are good for months properly refrigerated (if they last that long). 😉 Courtesy of helpwithcooking.com

Vinegar Air and Salty Crispy Potatoes – British Larder

Entered for safekeeping, by Madalene Bonvini-Hamel of The British Larder. The recipe’s name tickles me. I imagine snacking on these in front of a soccer match with a fine ale. Bring out the mandolin, the deep fryer (or spray them with nonstick spray and bake them in the oven if you must), and a cream whipper (which needs 2 Nitrous Oxide pellets). (If you don’t have a cream whipper, you could whip with a hand mixer or stand mixer, it just won’t be as chic. But if you were looking for an excuse to get a professional cream whipper, here it is.) (See Recipe #13526 for directions to microwave the potato chips.) This may be made into a Vegetarian dish if agar agar replaced the gelatin. There! You have made gourmet potato chips! Eat with attitude!
