Ratatouille

- 1 eggplant (aubergine), large, diced
- 2 zucchini, sliced
- 1 bell pepper, yellow, sliced
- 1 bell pepper, red, sliced
- 1 onion, large, sliced
- 3 cloves of garlic, minced
- 4 tomato(s), large, diced
- 1/4 cup of tomato paste
- 2 tablespoons of olive oil
- 1 teaspoon of thyme
- 1 teaspoon of rosemary
- salt and pepper, to taste
- basil, chopped (for garnish)
Instructions

Preheat oven to 375°F (190°C).

SautéIn a large skillet, heat olive oil over medium heat. Sauté onion and garlic until softened.

Add eggplant, zucchini, and bell peppers. Cook for 5-7 minutes until vegetables are slightly tender.

Stir in diced tomatoes, tomato paste, thyme, rosemary, salt, and pepper. Cook for an additional 5 minutes.

BakeTransfer the vegetable mixture to a baking dish. Arrange the slices evenly.

Bake in the preheated oven for 25-30 minutes or until vegetables are tender and flavors meld.
