Pat’s Zucchini Bread

- 3 eggs
- 2 cups of granulated sugar
- 1 cup of Vegetable oil
- 1 teaspoon of vanilla extract
- 2 cups of zucchini, grated
- 2 cups of flour, sifted
- 1 teaspoon of cinnamon, powder
- 2 teaspoons of sodium bicarbonate (baking soda)
- 1 teaspoon of salt
- 1/4 teaspoon of baking powder
- 1 cup of walnuts, chopped
- chocolate chips, optional
Instructions

PreheatPreheat oven to 350F. Grease and flour 2 9×5 loaf pans or use nonstick spray. Set aside.

BeatBeat eggs together until frothy. Add sugar, vegetable oil and vanilla until thick.

MixAlternate stirring dry remaining ingredients and zucchini into the mix. Fold in optional ingredients, if desired.

PourPour batter into loaf pans

BakeBake for 1 hour or until toothpick comes out clean.
