Oua’s Lentil Soup

- 1 1/2 cups of lentils, sorted
- 1 onion, finely chopped (just before paste consistency)
- 2–3 cloves of garlic, finely chopped
- 2 tablespoons of tomato paste
- 1 bay leaf(s)
- 1 teaspoon of salt, or chicken base
- pepper, to taste
- 2 tablespoons of olive oil
Instructions

Prepare lentilsTake lentils and boil them for a few minutes. Water should turn red/brown. Strain out the lentils and do it again until the water boils clear. When it does take out the lentils, clean the pot and add back in. Add enough water to cover and cook (usually half way)

Prepare chicken base (if using)Chicken base needs to be diluted in very hot water before added to the pot. I usually do this with the tomato paste then add to your lentils. If you use salt skip this step.

SimmerAdd in onion, garlic, pepper, olive oil and bay leaf and let cook until texture is thick and robust.
Notes
Greek Tip: If after 20 or so minutes of cooking the lentils are still hard they will never get soft, it’s just how those lentils are. Cooking them more won’t change that. Toss them and try again with a new batch.
