Norwegian Cod Soup
Creamy, savoury fish soup – a comforting meal that is ready in less than 30 minutes. Serve with a nice crusty bread.

Ingredients

- 2 cups fish stock
- 1 lb cod
- 2 peeled & cut carrots
- 1 minced garlic clove
- 1 chopped onion
- 1 tablespoon olive oil
- 3/4 cup heavy cream
- 3/4 cup creme fraiche
- 1 1/2 teaspoons kosher salt
- chopped dill, fresh
- black pepper, freshly ground
Instructions
- Cut cod fillet into small pieces. Heat olive oil over medium-high.
- Add onion to oil and saute until softened. Then add garlic and saute for about 1 minute. Stir in fish stock and bring to a boil.
- Add carrots and turn heat to low. After 5 minutes, stir in heavy cream, creme fraiche, and salt.
- Add fish and cook a few more minutes until the fish is completely cooked through, then season with salt and pepper. Garnish with dill before serving.
