Creamy, savoury fish soup – a comforting meal that is ready in less than 30 minutes. Serve with a nice crusty bread.

Ingredients

  • 2 cups fish stock
  • 1 lb cod
  • 2 peeled & cut carrots
  • 1 minced garlic clove
  • 1 chopped onion
  • 1 tablespoon olive oil
  • 3/4 cup heavy cream
  • 3/4 cup creme fraiche
  • 1 1/2 teaspoons kosher salt
  • chopped dill, fresh
  • black pepper, freshly ground

Instructions

  1. Cut cod fillet into small pieces. Heat olive oil over medium-high.
  2. Add onion to oil and saute until softened. Then add garlic and saute for about 1 minute. Stir in fish stock and bring to a boil.
  3. Add carrots and turn heat to low. After 5 minutes, stir in heavy cream, creme fraiche, and salt.
  4. Add fish and cook a few more minutes until the fish is completely cooked through, then season with salt and pepper. Garnish with dill before serving.
