Mushroom Soup Meatloaf

- 1 1/2 lbs ground beef
- 1/2 cup minced onion
- 1 large egg
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup minced green bell pepper
- 1 (10.5 oz) can condensed golden mushroom soup, divided
- 1 cup seasoned stuffing mix (such as Pepperidge Farm)
- 1/4 cup evaporated milk
Instructions
- Preheat Oven: Set your oven to 350°F (175°C).
- Mix Ingredients: In a large mixing bowl, combine the ground beef, minced onion, egg, salt, pepper, green bell pepper, stuffing mix, evaporated milk, and half of the mushroom soup. Mix well until evenly combined.
- Shape the Meatloaf: Transfer the mixture to a greased loaf pan or shape it into a loaf on a baking sheet.
- Top with Soup: Spread the remaining half of the mushroom soup evenly over the top of the meatloaf.
- Bake: Place in the preheated oven and bake for 1 hour, or until the meatloaf is cooked through and reaches an internal temperature of 160°F (70°C).
- Rest and Serve: Let the meatloaf rest for 5-10 minutes before slicing. Serve warm with your favorite sides.
