- 2 whole artichokes, stems and thorny leaves removed
- 1 cup of mayonnaise
- 1/2 cup of pineapple
- 1 tablespoon of lemon, juice
- salt and pepper, to taste
Instructions

Prepare the artichokes by trimming the stems and removing the tough outer leaves. Cut off the top third of each artichoke and use scissors to trim the thorny tips of the remaining leaves.

Steam 25-35 minutes, or until the outer leaves pull off easily and the base is tender when pierced with a fork.

While the artichokes are steaming, prepare the dipping sauce. In a blender or food processor, combine the mayonnaise, chopped pineapple, lemon juice, salt, and pepper. Blend until smooth.

Allow artichokes to cool slightly before serving with dipping sauce on the side.
