The Irish Goody! Great for when you just want something a bit sweet and easy to make or when your little ones aren’t feeling well.

Ingredients

  • 4 slices of bread, white or brown
  • 2 cups of milk
  • granulated sugar, or brown sugar – to taste preference
  • 1 teaspoon of vanilla extract
  • dash of cinnamon
  • whipped cream, optional
  • butter, optional

Instructions

  1. Cut the bread slices into bite-sized cubes or tear them into smaller pieces. Place into mugs or bowls. To make it a bit more decadent, butter the bread first.
  2. In a saucepan, heat the milk over medium heat until it comes to a gentle boil. Stir occasionally to prevent the milk from scorching at the bottom of the pan.
  3. Once the milk is boiling, reduce the heat to low and stir in the sugar and vanilla extract. Let the mixture simmer for another minute or two, stirring continuously until the sugar is completely dissolved.
  4. Pour the mixture over the bread and let soak.
  5. Sprinkle cinnamon over and add a dollop of whipped cream if desired.

Notes

Everyone makes this Irish classic a wee bit differently but essentially it’s cubed bread soaked in boiled milk with a bit of sugar. I like to add a bit of breakfast tea and brown sugar with a sprinkle of cinnamon.
