Divinity
Savor the sweetness of a Southern classic: Divinity candy, a fluffy, melt-in-your-mouth treat made with whipped egg whites, sugar, and pecans.

Ingredients

- 3 cups of granulated sugar1/2 cup of white syrup
- 1/2 cup of water
- 3 eggs
- 1 teaspoon of vanilla extract
- 1 pinch of salt
- 1 cup of nuts
Instructions

Beat egg whites until stiff peaks form.

Boil sugar, syrup and water, stirring constantly until it reaches 260°F (126°C) about 8-10 minutes. You can test it’s doneness by dropping a bit into cold water, if it turns into a hard ball it is done.

Beat – Slowly pour the mixture over the beaten egg whites while mixing on high speed – don’t rush. This step should take about 2 minutes until all of the mixture is combined.

Continue to beat on high speed for another 5-8 minutes until the candy loses some of its glossiness and starts to hold its shape.

Mix in the vanilla, pinch of salt and the chopped pecans

Shape – While still hot, pour into greased tins or drop onto a baking sheet lined with parchment paper using two lightly oiled spoons to form shapes.

Notes
