Ingredients

  • 1 package or pound of gnocchi
  • 2 tablespoons of butter, unsalted
  • 2 leek(s), cleaned and thinly sliced (white and light green parts only)
  • 2 cloves of garlic, minced
  • 1 cup of heavy cream
  • 1 cup of Parmesan cheese, shredded
  • salt and pepper, to taste
  • parsley, chopped for garnish

Instructions

  1. Cook the gnocchi
    Cook the premade gnocchi according to the package instructions. Usually, you’ll just need to boil them until they float to the surface, which takes about 2-3 minutes. Drain and set aside.
  2. Sauté
    In a large skillet over medium heat, melt the butter. Add the sliced leeks and cook for 3-4 minutes until they are softened.
  3. Add the minced garlic to the skillet and sauté for an additional 1-2 minutes until fragrant.
  4. Add cream
    Pour in the heavy cream, stirring to combine with the leeks and garlic. Allow the mixture to come to a gentle simmer.
  5. Stir in the grated Parmesan cheese, continuing to stir until the cheese is melted and the sauce is smooth and creamy.
  6. Season
    Season the sauce with salt and pepper to taste. Remember to taste and adjust the seasoning according to your preference.
  7. Combine
    Add the cooked gnocchi to the skillet, tossing gently to coat them evenly with the creamy leek sauce.
  8. Once the gnocchi are heated through and well-coated, remove the skillet from the heat.
  9. Garnish and serve
    Serve the creamy gnocchi with leeks in individual bowls, garnishing with chopped fresh parsley.
