Cheddar Biscuits

- 2 cups of flour, all purpose
- 1 tablespoon of baking powder
- 1/2 teaspoon of sodium bicarbonate (baking soda)
- 1/2 teaspoon of salt
- 1/2 cup (1 stick) of butter, unsalted, cold and cubed
- 1 cup of Cheddar cheese, sharp, shredded
- 3/4 cup of buttermilk
- 2 tablespoons of chives, fresh, chopped

PreheatPreheat your oven to 450°F (230°C). Line a baking sheet with parchment paper.

WhiskIn a large mixing bowl, whisk together the flour, baking powder, baking soda, and salt.

Add butterAdd the cold, cubed butter to the flour mixture. Use a pastry cutter or your fingers to work the butter into the flour until the mixture resembles coarse crumbs.

Add cheese and chivesStir in the shredded cheddar cheese and chopped chives

CombineMake a well in the center of the mixture and pour in the buttermilk. Gently mix until just combined. Do not overmix; the dough should be slightly sticky.

ShapeTurn the dough out onto a lightly floured surface. Pat it into a rectangle, about 1-inch thick.

Use a biscuit cutter to cut out biscuits and place them on the prepared baking sheet, leaving a little space between each.
