Ingredients

  • 2 cups of flour, all purpose
  • 1 tablespoon of baking powder
  • 1/2 teaspoon of sodium bicarbonate (baking soda)
  • 1/2 teaspoon of salt
  • 1/2 cup (1 stick) of butter, unsalted, cold and cubed
  • 1 cup of Cheddar cheese, sharp, shredded
  • 3/4 cup of buttermilk
  • 2 tablespoons of chives, fresh, chopped

Instructions

  1. Preheat
    Preheat your oven to 450°F (230°C). Line a baking sheet with parchment paper.
  2. Whisk
    In a large mixing bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. Add butter
    Add the cold, cubed butter to the flour mixture. Use a pastry cutter or your fingers to work the butter into the flour until the mixture resembles coarse crumbs.
  4. Add cheese and chives
    Stir in the shredded cheddar cheese and chopped chives
  5. Combine
    Make a well in the center of the mixture and pour in the buttermilk. Gently mix until just combined. Do not overmix; the dough should be slightly sticky.
  6. Shape
    Turn the dough out onto a lightly floured surface. Pat it into a rectangle, about 1-inch thick.
  7. Use a biscuit cutter to cut out biscuits and place them on the prepared baking sheet, leaving a little space between each.
  8. Bake
    Bake in the preheated oven for 10-12 minutes or until the tops are golden brown.
  9. Brush the tops of the biscuits with melted butter as soon as they come out of the oven for extra flavor.
  10. Cool and serve
    Allow the cheddar biscuits to cool slightly before serving. Enjoy them warm with butter!
