Aunt Kim’s Cranberry Pudding & Sauce

From the CFiander Family Collection: A blissful blend of cranberries, sweetness, and warmth, paired with luscious buttery sauce.

Ingredients

Pudding



3 tablespoons of shortening


1 egg


1 cup of milk


2 cups of flour


1 teaspoon of baking powder


2 cups of cranberries, rinsed



Sauce



2/3 cup of butter


1 1/3 cup of granulated sugar


2 cups of heavy cream (whipping cream)


1 teaspoon of vanilla extract


Instructions

Pudding

      1. Preheat
        Preheat oven to 350F
      2. Whisk
        Whisk together dry ingredients
      3. Mix
        Mix together shortening, sugar, egg and milk
      4. Combine
        Mix together dry and wet mixtures
      5. Fold
        Gently fold in cranberries
      6. Bake
        Bake in a 9×13 pan at 350F for 30-40 mins.

Sauce

    1. Mix
      Melt butter in a saucepan. Stir in sugar until dissolved then add whipping cream. Remove from heat and add vanilla.

Notes

Serve warm or at room temperature.
