Ingredients

  • 1/2 rack of lamb (4 Ribs)
  • 1/4 teaspoon oregano
  • 1/4 teaspoon rosemary
  • salt
  • pepper
  • 3 teaspoons mint jelly
  • 1 -2 clove garlic, minced
  • 1 teaspoon dried parsley

Instructions

  1. Season your rack with the rosemary, oregano& salt& pepper.

  2. Have your oven temp at 375 degrees F.

  3. Place your rack in an open oven proof pan and cook for about 20- 25 minutes (it depends on how thick the rack is).

  4. Meanwhile, melt the jelly with the garlic and parsley in a small saucepan.

  5. Take out the rack and pour the glaze over it.

  6. Return to oven, apprx 10 minutes, until the internal temp reaches 160-165 degrees F.

  7. This will have the rack still a bit pink.
