Ingredients

  • 1/4 teaspoon salt
  • 1/4 teaspoon ground cumin
  • 1/8 teaspoon ground red pepper
  • 4 -6 ounces tilapia fillets
  • cooking spray
  • 1 lemon, quartered
  • 2 tablespoons butter, softened
  • 2 tablespoons cilantro, chopped
  • 1/2 teaspoon grated lemon peel
  • 1/4 teaspoon paprika
  • 1/8 teaspoon salt

Instructions

  1. Combine the first three ingredients and wprinkle over both sides of the fish.

  2. Heat a large non-stick skillet over medium high heat and coat the pan and both sides of the fish with cooking spray.

  3. Place the fish in the pan and cook for three minutes on each side, or until it flakes with a fork.

  4. Place the fish on a serving platter and squeeze the lemon wedges over the fish.

  5. Place the butter and remaining ingredients in a small bowl and stir until blended, serve with the fish.
