  • 3 slices bacon
  • 1 cup cheddar cheese, shredded
  • 16 ounces ricotta cheese
  • 1 cup feta cheese
  • 1 lb crab claw meat
  • 6 eggs
  • 1/2 teaspoon thyme
  • 1/2 teaspoon parsley
  • 1/2 cup onion, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 7 white mushrooms, sliced
  • 15 ounces fresh spinach
  • 1 tablespoon oil

Instructions

  1. Cook bacon til crisp, set aside. Combine next 10 ingredients until thoroughly mixed. Set aside.

  2. Saute mushrooms til almost tender, add spinach, cook until spinach is cooked. You may have to add more oil because the mushrooms will soak up the oil.

  3. Add spinach and cheese mixture together. Pour into an 8x8 inch greased casserole dish. Bake at 350 degrees for 1 hour or until top is browned and center is set.
