Ingredients

  • 10 -20 Brussels sprouts, cleaned and cut in half
  • 3 -5 slices bacon (diced)
  • 1 small onion, diced
  • 4 ounces mushrooms (button or crimini work great)
  • 4 tablespoons butter
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper

Instructions

  1. place bacon in a saute pan and begin to render over a medium high heat.

  2. before the bacon is completely rendered, and enough butter to the pan to saute the onions and mushrooms.

  3. add the onions and saute.

  4. as the onions near translucent, add the mushrooms and salt lightly.

  5. lightly saute and when the mushrooms begin to become limp, add Brussels sprouts and mix until sprouts are coated and shine.

  6. salt and pepper to taste.

  7. cover and reduce heat.

  8. cook until sprouts are tender and beginning to caramelize.

  9. taste and re-season and serve.
