Ingredients

  • 3/4 lb ground beef
  • 3/4 lb ground veal
  • 2 slices white bread
  • 1/2 cup milk
  • 1 1/2 tablespoons dried onion
  • salt and pepper
  • 2 quarts water
  • 4 peppercorns
  • 4 sprigs celery leaves
  • 2 beef bouillon cubes
  • 2 tablespoons butter
  • 2 tablespoons flour
  • 1 lemon, juice of

Instructions

  1. Mix beef, veal, bread, and seasonings. Form into balls. Bring brine to boil (water, peppercorns, celery, bouillon). Add meatballs and simmer 10-15 minutes. Remove with slotted spoon. To 2 1/2 cups sieved brine, add paste of butter and flour. Cook. Add lemon juice. Pour over meatballs. Serve with buttered noodles.
