Ingredients
- 1 1/2 lb tuna steaks (about 680 g)
- 1/4 cup sherry wine
- 1/4 cup light soy sauce
- 2 tablespoons mayonnaise
- 1 teaspoon curry powder
- 1 tablespoon chopped fresh chives
- Salt and pepper to taste

Instructions
Pat tuna dry and season lightly with salt and pepper.
Whisk together mayonnaise, curry powder, and chopped chives in a small bowl to make curry chive mayonnaise.
Heat a nonstick skillet over medium-high heat. Briefly sear tuna steaks 1–2 minutes per side for rare to medium-rare; adjust time for desired doneness.
Return tuna to the skillet briefly, spoon curry chive mayonnaise over each steak, and simmer 30 seconds to meld flavors.
Serve hot with a drizzle of sherry-soy reduction from the pan.
