Ingredients

  • 1 lb lean ground beef
  • 2 eggs
  • 3 tablespoons tomato paste
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt, suited to your taste
  • 1/2 teaspoon pepper
  • 1/3 cup diced onion
  • 1 cup of diced day old bread or 1/2 cup breadcrumbs
  • ketchup

Instructions

  1. Preheat oven to 350 degrees.

  2. In a large bowl combine all the ingredients except for the ketchup until well distributed.

  3. Shape the ground beef mixture into a loaf and place in the loaf pan.

  4. With the ketchup, "ice" the meatloaf as if you were icing the top of a cake, and use more or less ketchup to suit your taste. In my family we like it with alot of ketchup.

  5. Bake in oven for 55 - 60 minutes.

  6. We serve this dish with mashed potates and corn.
