Ingredients

  • 1 onion, chopped
  • 1 garlic clove, minced
  • 1 tablespoon oil
  • 2 (6 1/2 ounce) jars marinated artichokes, drained and chopped
  • 6 eggs, beaten
  • 1 cup cheddar cheese, shredded
  • 1 cup mozzarella cheese, shredded
  • 1 cup parmesan cheese, grated
  • 1/2 teaspoon italian seasoning
  • 1/4 cup fresh parsley, chopped
  • 1/4 teaspoon pepper
  • 1/8 teaspoon Worcestershire sauce
  • 1/8 teaspoon hot pepper sauce
  • 1/4 cup Italian seasoned breadcrumbs
  • additional fresh parsley, chopped

Instructions

  1. In a skillet over medium heat, saute onion and garlic in oil until tender; drain and set aside. Combine artichokes, eggs, cheeses, seasonings, and sauces in a large bowl; mix well. Stir in onion mixture and bread crumbs.

  2. Fill greased mini muffin cups 2/3 full. Bake at 325 degrees for 15 to 20 minutes, until firm and golden.

  3. Serve warm, sprinkled with additional parsley, if desired.
