- 1 kg mussels, unshelled, cleaned and debearded
- 6 garlic cloves, sliced
- 1 red onion, diced
- White wine, as needed
- Chile flakes or fresh chile, to taste

Instructions
Discard any cracked mussels or mussels that do not close when tapped.
Place a large pot over medium heat and add the red onion, garlic, and chile.
Cook briefly until the onion begins to soften and the garlic is fragrant.
Add the mussels and white wine, then cover the pot.
Cook, shaking the pot occasionally, until the mussels open.
Discard any mussels that remain closed and serve the mussels with the sauce.
