- 3/4 cup butter or oil

Instructions
Melt the butter in a heavy skillet or saucepan over medium heat, or heat the oil if using.
Add the flour and stir constantly until smooth.
Cook, stirring continuously, until the roux reaches the desired gumbo-base color, about 17 minutes.
Remove from heat and use as a gumbo base.
