Instructions

  1. Preheat oven to 325.

  2. Grease a large cookie sheet.

  3. Whisk egg whites in bowl until frothy, then stir in almond extract.

  4. Mix together coconut, sugar, flour and salt.

  5. Gently stir egg mixture into coconut mixture to form a batter.

  6. Drop tablespoons of dough 1 1/2 inches apart onto prepared cookie sheet.
