Instructions
Preheat the oven and line a baking sheet with parchment paper.
Slice the beets very thinly and place in a bowl.
Toss the beet slices with olive oil, sea salt, and rosemary.
Arrange the slices in a single layer on the prepared baking sheet.
Bake until the beet slices are crisp, checking often to prevent burning.
Let cool slightly before serving.
