- 1/2 cup uncooked short grain brown rice or basmati rice, cooked to yield about 1 1/2 cups

Instructions
Cook the rice according to package directions until you have about 1 1/2 cups cooked rice.
Peel and cube the butternut squash, toss with olive oil, and roast until tender.
Warm the black beans.
Fill each tortilla with cooked rice, roasted butternut squash, and black beans.
Fold and roll into burritos, then serve warm.
