Ingredients

  • 3 tablespoons olive oil
  • 1 small onion, diced
  • 1 garlic clove, minced
  • 3 cups frozen peas
  • 1 tablespoon lemon juice
  • 1 teaspoon lemon zest
  • 1/2 teaspoon salt
  • 1 (7 1/4 ounce) box of your favorite mac and cheese (yellow cheddar is my preference)

Instructions

  1. Heat 1 tablespoon of olive of in a medium pan. Add the onion and cook until translucent. Add the garlic and peas and saute for another minute of two. Don’t over do it or your peas will turn brown.

  2. Place the cooked pea mixture in a food processor, add lemon juice, zest, salt, pepper and remaining olive oil. Pulse until the peas have been pureed. Set aside.

  3. Cook you mac and cheese as directed on the box. Once finished. Add in the pea mixture and stir together.

  4. Garnish with you favorite hot sauce (I like habanero with a vinegar base) if desired.
