Ingredients

  • 1 cup onion, diced
  • 3 garlic cloves, diced
  • 1 lb lean ground beef
  • 1/2 teaspoon salt
  • 2 tablespoons taco seasoning
  • 1 cup corn
  • 1 cup beans
  • 1 cup salsa
  • 2 cups water
  • 8 ounces rotini pasta
  • 1 cup cheese
  • 1/2 cup fresh tomato, diced
  • 2 tablespoons fresh cilantro

Instructions

  1. Preheat large, deep skillet/saucepan over medium heat.

  2. Spray cooking spray and add onion, garlic and beef. Season with salt and taco seasoning and cook, stirring occasionally until cooked through.

  3. Drain excess fat if necessary.

  4. Stir in corn, beans, salsa, pasta, and 2 cups water.

  5. Bring to a boil, cover, reduce heat and simmer until pasta is cooked through, 10-15 minutes, stirring occasionally.

  6. Remove from heat and stir in cheese, tomatoes & cilantro.

  7. Enjoy!
