  • 1/4 cup olive oil
  • 12 ounces frozen spinach, thawed
  • 1 cup heavy cream
  • 4 ounces blue cheese, crumbled

Instructions

  1. Pre-heat oven to 350°F.

  2. Season steaks with salt and pepper. In a pan over a medium-high heat, sear steaks for 3 to 5 min per side (or to your liking).

  3. Thinly slice potatoes, dress with olive oil and season with salt. Place on a baking sheet and bake in the oven for about 15 minute.

  4. In a saucepan, combine spinach with heavy cream and season with salt and pepper. Warm over medium heat for 5 minutes.
