Ingredients

  • 1 1/2 cups all-bran cereal
  • 1 cup skim milk
  • 1 cup whole wheat flour
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground nutmeg
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 3/4 cup rolled oats
  • 1 teaspoon vanilla
  • 3 ripe bananas (I freeze mine and then thaw, toss the juice in too)
  • 2 small apples, grated
  • 1 egg
  • 1/3 cup oil

Instructions

  1. Pour milk over cereal and let sit for at least 10 minutes.

  2. Sift flour, spices, salt , baking powder and baking soda together. Add dry oatmeal.

  3. In a separate bowl, thoroughly blend egg, oil, vanilla, bananas and grated apples.

  4. Add cereal and milk mixture to dry ingredients, then add wet ingredients Stir until combined.

  5. Line muffin pan with paper liners. Fill liners 2/3 full. Bake 20 minutes at 375*.
