Ingredients

  • 1 1/2 cups wheat bran
  • 1 1/4 cups fat-free buttermilk
  • 1 cup unbleached flour
  • 1 teaspoon baking soda
  • 1/3 cup brown sugar
  • 2 egg whites
  • 1 cup chopped dried apricot

Instructions

  1. Combine the bran and non fat buttermilk and let sit for 25 minutes.

  2. Combine the flour, soda, brown sugar together.

  3. Add the bran to the egg whites, stir well.

  4. Add the wet ingredients into the dry ingredients just until all are moistened.

  5. Fold in the apricots.
