  • 500g/1lb 2oz frozen red berries, such as raspberries, blackberries and cherries
  • 50g/1¾oz caster sugar
  • 1 heaped tbsp cornflour

Instructions

  1. Put the frozen red berries and caster sugar in a saucepan and heat gently until the berries release their juices.

  2. Mix the cornflour with a little cold water to make a smooth slurry.

  3. Stir the cornflour slurry into the hot berries and cook until the mixture thickens.

  4. Remove from the heat and leave to cool before using in the trifle.
