Ingredients

  • 1 lb raw soba noodles or udon noodles
  • 2 lbs raw boneless chicken breasts or boneless chicken thighs, sliced thin
  • 1 tablespoon cornstarch

Instructions

  1. Cook the soba or udon noodles according to package directions; drain and set aside.

  2. Toss the thinly sliced chicken with the cornstarch.

  3. Stir-fry the chicken in a hot pan until cooked through.

  4. Add the cooked noodles to the pan and toss with the chicken until heated through.

  5. Serve hot.
