Ingredients

  • vegetable oil
  • 1 1/2 cups flour
  • 1 teaspoon paprika
  • 1 teaspoon poultry seasoning
  • 1/4 teaspoon cayenne pepper
  • 1/4 teaspoon allspice
  • 1 cup buttermilk
  • 1 lb boneless skinless chicken thighs
  • 1 lb chicken tenderloins
  • salt and pepper

Instructions

  1. Heat 1 1/2 inches vegetable oil in a deep skillet over medium high heat.

  2. A cube of bread should brown in a 40 count when oil is ready.

  3. Set out three disposable pie tins.

  4. Mix flour with paprika, poultry.

  5. seasoning, cayenne and allspice.

  6. Divide seasoned flour between two tins.

  7. Pour buttermilk into a tin.

  8. Line up tins as such: flour, buttermilk and then flour.

  9. Season chicken with salt and pepper.

  10. Coat chicken in flour, then buttermilk, then a second coating of flour.

  11. Cook chicken 6 minutes on each side,until deep golden brown and firm.
