Ingredients

  • 2 tablespoons olive oil
  • 2 large red peppers or 2 large yellow peppers
  • 1 medium onion
  • 6 ounces portabella mushrooms
  • 16 ounces loaf focaccia bread
  • 1/4 cup dijon-style mustard
  • 6 ounces shredded cheddar cheese

Instructions

  1. Slice bread in half lengthwise.

  2. Slice peppers into 1/8 inch slices.

  3. Slice onion and mushrooms.
