Ingredients

  • 4 (6 ounce) orange roughy fillets, 1/2 inch thick
  • 4 ounces feta cheese with dried basil and tomato or 4 ounces plain feta cheese
  • 1/4 cup low-fat sour cream
  • 1/4 cup finely chopped red onion
  • 1 garlic clove, minced finely
  • 3 tablespoons capers, drained and rinsed
  • 2 small plum tomatoes, seeded, and finely chopped
  • 2 teaspoon lemons, rind of, grated
  • 1 teaspoon dried oregano
  • 1/2 teaspoon fresh ground black pepper
  • 1/2 teaspoon kosher salt
  • 1 -2 teaspoon white wine (optional)

Instructions

  1. Preheat oven to 400°F.

  2. Line baking sheet with foil.

  3. Lightly spray foil with non-stick spray.

  4. Season fish on both sides with kosher salt and fresh ground pepper.

  5. In a medium bowl combine feta, sour cream, red onion, garlic, capers, tomatoes, lemon peel and oregano and stir until thoroughly combined.

  6. Add wine to feta cheese mixture if desired.

  7. Arrange fish on prepared baking sheet.

  8. Spread cheese topping over fish.

  9. Bake until fish is just cooked through, approximately 10-12 minutes.
