  • 2 cloves garlic, minced
  • 2 (15 ounce) cans garbanzo beans, rinsed and drained
  • 3 tablespoons lime juice
  • 1/2 teaspoon salt
  • 1/2 cup olive oil
  • 3/4 cup fresh cilantro, chopped
  • 2 jalapeno peppers, seeded and minced

Instructions

  1. In food processor, pulse garlic.

  2. Add beans, lime juice and salt.

  3. Puree.

  4. Slowly add olive oil and blend until thick, 1-2 minute.

  5. Add cilantro and jalapeno, pulse 10 seconds.

  6. Transfer to bowl, and chill a few hours to allow flavors to meld.
