Equipment

Large bowl, mixing bowl, 2 loaf pans, wax paper, toothpick

Ingredients

  • 3 cups flour
  • 2 cups sugar
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1 cup chopped walnuts
  • 1 cup coconut
  • 2 teaspoons vanilla
  • 3 eggs, beaten
  • 1 1/4 cups vegetable oil
  • 2 cups mashed bananas (4 large)
  • 1 (8 ounce) can crushed pineapple (well drained)

Instructions

  1. In large bowl combine flour, sugar, baking soda and cinnamon; stir in nuts and coconut.

  2. Set aside.

  3. In separate bowl, combine remaining ingredients and stir until just moist.

  4. Mix together dry ingredient mixture and wet ingredient mixture.

  5. Pour into 2 *prepared loaf pans.

  6. Bake at 350F for approximately 1 hour 15 minutes (depending on altitude).

  7. Check center of loaf with toothpick and if it comes out clean, it�s done.

  8. Cool before removing from pan (about 15 min).

  9. * Prepared loaf pans: Line bottom with wax paper and grease and flour sides. Bottom will burn before cooked if not lined.
