Equipment
Grill, bowl
Ingredients
- 3 lbs fish (use a fresh whole mild white fish, gutted, scaled and head removed)
- 1 1/2 cups coconut milk
- 1/2 onion, chopped
- 1 teaspoon salt
- 1 chili pepper, minced
Instructions
Prepare the grill, preferably a charcoal grill. Grill the whole fish until it is cooked (the flesh flakes easily with a fork).
Meanwhile add the coconut milk, onion, salt and chile pepper in a bowl.
When the fish is cooked, pour the coconut milk mixture over the fish to thoroughly soak it. Cover and let stand for 5 minutes to absorb the milk mixture.
Serve with cooked rice.
