Equipment

Aluminum foil, oven or grill, baking sheet

Ingredients

  • 2 sheets aluminum foil
  • 2 boneless skinless chicken breast halves
  • 1/2 cup green chili salsa
  • 2/3 cup refried beans
  • 1/4 cup shredded cheddar cheese
  • 2 romaine lettuce leaves

Instructions

  1. PREHEAT oven to 450°F or grill to medium-high.

  2. CENTER one chicken breast half on each sheet of tin foil. Spoon salsa over chicken; top with beans.

  3. BRING up foil sides. Double fold top and ends to make airtight packet, leaving room for heat circulation inside. (think your old girl scout days). Repeat to make two packets.

  4. BAKE 15 to 18 minutes on a cookie sheet in oven OR GRILL 11 to 13 minutes in covered grill; sprinkle with cheese before serving.

  5. Serve on romaine leaves.
