Chow Fun is a smooth, slippery rice noodle. This Cantonese dish can be served for breakfast, lunch or dinner.

Ingredients

  • 1 lb chow fun rice noodles
  • 4 tablespoons oil
  • 1 teaspoon salt
  • 1 tablespoon light soy sauce
  • 2 tablespoons chicken stock (if needed)
  • 1/2 lb barbecued pork, shredded
  • 1/2 lb bok choy, sliced diagonally into pieces 1/2 inch long
  • 1/2 lb bean sprouts
  • 1 scallion, cut into 1 inch long pieces

Instructions

  1. Cut noodles into pieces, 1 1/2" long and 1/2" wide.

  2. Set aside.

  3. Heat 2 tbsp of oil in wok to 400°F.

  4. Add Chow Fun, and stir-fry quickly until it is well heated.

  5. Add 1/2 tsp salt and the soy sauce.

  6. If it's too dry, add the chicken stock.

  7. Remove from wok.

  8. Stir-fry pork for 1 minute.

  9. Add bok choy, sprouts, and scallion, and 1/2 tsp salt.

  10. Stir-fry for 2 minutes (may be prepared in advance to this point).

  11. Add chow fun and stir until heated throughout.
